Those look a little different than we eat them in New Orleans, but they look delicious. The only difference would be in New Orleans we would make them on New Orleans french bread, which is hard to find outside of Louisiana, also to add mayo, and to omit the cocktail sauce which is kinda touristy (locals usually put hot sauce or ketchup), but I agree cocktail sauce taste very good, it just gives it a different type of non traditional flavor. But, I must say, your sandwiches look delicious. Makes me want to go up the street to get a poboy at the poboy shop.
